I’m using balloons and post-it notes to make annotations for developers which is great. But I also would like to hide them with one mouseclick for showing the clean draft. Is this possible ?

Yes it is possible. Actually showing / hiding elements in simulation is quite frequenctly used.
You can use the “Operate on Element” action and choose to hide the element.
